Get a nice chicken breast. Make an incision in the side. Be carefull not to go all the way through....you just want to make a nice size pocket. rub a bit of salt and pepper into it.Get a few spears of Asparagus, place side by side, put a bit of butter on them and sprinkle a little salt over then and grill for a few mins (until they start to get a bit tender).Have a nice Cream cheese, and 1/2 fill the chicken pocket with it, and the rest with the Asparagus.Close the pocket as best as you can. Lay the breast on a nice size sheet of clingfilm and roll the breast in it (like making a chicken sausage :D ), then twist up the ends.Drop it into a pan of boiling water for about 10-14mins (depending on size of chix breast).Once cooked, take it out of the clingfilm and breadcrumb it. I like a few herbs in my breadcrumbs.....I'm a fan of basil and oregano :)Have a decent amount of hot oil on the go in a pan, drop in the breaded chicken, turning every 30sec's to a min, and cook until a nice golden brown.Slice into 4-5 and serve :)Serve with what you want, but I like to serve mine with buttered Jeresy Royals and baby veg :D
